Caviar has long been considered a staple food of Palm Beachers. Now, one of the town’s own has launched a new brand of the delicacy.

After over a decade of representing premium caviar labels, PR powerhouse Maribel Alvarez has co-founded Altima Caviar, which sustainably sources the highest-quality caviar from around the world. Each tin—whether Beluga Hybrid, Sevruga, Starlet, or Oscietra—is also produced from a single fish, ensuring consistency.

“Caviar was once the go-to delicacy for celebrating special occasions,” says Alvarez, “but now that it can be sustainably sourced, it’s become a daily delicacy.”

Alvarez believes “one needs to seize the tin,” and that caviar has a place in every occasion, whether served over ice at La Goulue, piled atop potato chips at home, or enjoyed as a cheeky “bump.”
