To celebrate the release of PALMER Vol. 10, our Anniversary Issue, the mixologist at Gabby and Gianpaolo De Felice’s Tutto Mare shares a special cocktail recipe with our readers, inspired by forbidden love. To be enjoyed at home or ordered at the restaurant, while taking in one of the best views in Palm Beach.
Romeo and Juliette
A forbidden spark between two families, based on Shakespeare story, in a glass.
Tequila Reposado brings warmth. The gentle oak is like an old soldier softened by love. The dark cherry tea tastes like the rush of first love—wide-eyed, electric, and impossible to forget. A whisper of pepperoncino keeps the chemistry alive—sweet, then a little dangerous—while citric acid keeps the drink crystal clear, instead of traditional citrus options. Montenegro Amaro closes the story with herbal, bittersweet memory: tradition meeting tenderness.
The half rim of black lava salt is the scar of the family split; the tiny rose buds are the defiant hope that still blooms.
Recipe
Ingredients
1.5 oz Reposado Tequila
0.75 oz Spicy Dark Cherry Syrup
0.75 oz Citric Acid solution (see below)
0.5 oz Montenegro Amaro
Method
Combine all ingredients in a mixing glass with ice and stir for about 10 seconds. Strain into a rocks glass over a large cube. Finish with a half rim of black lava salt and garnish with small rose buds placed on the ice.
Spicy Dark Cherry Syrup
Ingredients
500 ml (2 cups) water
350–400 g (1¾–2 cups) granulated sugar
3 dark cherry tea bags
½ tsp red pepper flakes (adjust to taste)
Method
Combine water and sugar in a saucepan over medium heat, stirring until fully dissolved.
Bring to a gentle simmer, then reduce heat to low.
Add tea bags and simmer lightly for 6–8 minutes. Remove from heat and allow to steep for an additional 8–10 minutes without squeezing the bags.
Strain through a fine mesh sieve into a clean container.
Taste and adjust sweetness if needed.
Return to low heat and add red pepper flakes. Simmer for 1–3 minutes, then remove from heat and let rest briefly, tasting as it develops.
Cool, bottle, and refrigerate.
Citric Acid Solution
To replicate the brightness of fresh lemon juice while maintaining clarity:
Dissolve ¼ teaspoon citric acid into 1.5 oz water
This yields the equivalent acidity of 1.5 oz fresh lemon juice
A touch of simple syrup can be added to soften the acidity if desired.
